Rita's Stuffed Mushrooms
The perfect side dish to any Italian meal. Or starter.
Ingredients
- 2 packages of cap mushrooms, the smaller the better
- Italian style breadcrumbs
- Locatelli cheese
- 3 cloves of garlic
- Olive oil
The Method
- Saute about 1/4" olive oil in pan with 3 garlic cloves
- Pop out mushroom stems and put mushroom caps aside
- Chop stems and sauté with garlic cloves for about 20 minutes
- Turn off heat, remove garlic cloves (if you wish) and pour in approx. 2 – 2 1/2 cups of breadcrumbs and approx. 1/2 cup of locatelli cheese until all the oil is absorbed. Mixture will be sandy.
- Now the secret ingredient! Add water to soften breadcrumb mixture. You don’t want the mixture to be too mushy so add a little water at a time.
- Spoon breadcrumb mixture into mushroom caps. Cook at 350 for 25-30 minutes.
