Kathy’s Zucchini Cake
Nothing’s better in the morning with a cup of coffee.
Ingredients
- 3 eggs
- 1 cup vegetable oil
- 1 tsp vanilla
- 2.5 cups sugar
- 2 cups unpeeled grated zucchini
- 2 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- Quarter tsp baking powder
- 3 cups unsifted flour
- 1 grated apple, peeled and cored
- 1 cup chopped walnuts (optional)
The Method
In a large bowl, beat eggs until foamy, gradually adding oil, vanilla and sugar. Add grated zucchini, cinnamon, salt, baking soda and baking powder. While mixing, gradually blend in flour, mixing well after each addition. Fold in grated apple and walnuts. Pour into greased 3 qt. bundt pan and bake in preheated oven at 350 degrees for 60 to 80 minutes.
