Henry’s Gashouse Eggs
Also known as Hollywood Eggs, Eggs in a Nest, Knothole Eggs, One-Eyed Jack, and by many other unusual names . . . simple and delicious, they are sure to become a 'Sunday Favorite'
Ingredients (for 1 serving)
- 1 egg
- 1 slice white bread
- 2-3 tablespoons butter
- Salt and freshly ground black pepper
The Method
Butter bread lightly and pan-toast both sides in a fry pan. As the second side starts to brown, use an inverted glass (shot or small juice) to cut a circle in the middle of the slice. Set cutout aside on the fry pan. Melt a small dollop of butter in the hole, crack an egg into the hole, and cook until set, about 2-3 minutes. Lightly flip over if you prefer your eggs over easy. Season to taste with salt and pepper. Serve with cutout 'mop' for dipping in the yolk.
Mexican Style: Add salsa and cheese and finish in the oven.
Grilled Cheese Gashouse Eggs: Use two slices of bread, slipping American Cheese between the slices before cutting out the center.
Egg in the basket: Substitute waffle for bread.
Mothers Day Special: Substitute whole wheat bread, Sprinkle finished egg with Parmesan cheese
